About Noha, MA, MS, RDN

Teaching has always been at the heart of who I am.

With over a decade of experience as an educator and a Master’s degree in Education, I have taught across classrooms, led home literacy groups, and created early childhood Arabic language learning circles rooted in curiosity and cultural connection. Whether in a school setting or gathered around books in a family home, my passion has always been to nurture children’s love for language, literacy, and lifelong learning.

Recipe collecting became a nutrition education mission.

Alongside teaching, another passion quietly grew — food.

Food in my home was never just nourishment. It was memory. It was tradition. It was celebration and comfort. The kitchen was where stories were told and where holidays came to life.

I began writing down our family recipes, especially the ones that shaped my childhood. These were the dishes we prepared for gatherings, for religious holidays, and for long summer evenings with family. They carried the flavors of my Egyptian upbringing.

Frequent visits to the Mediterranean coast of Alexandria deepened my love for vibrant produce, fresh herbs, olive oil, seafood, and the bold flavors that define our table. Our table was always filled with vibrant vegetables, roasted with delicious flavors layered with lemon, garlic, herbs, and sultry spices.

As I documented these recipes, I began to see something deeper. Many of the foods I grew up with were naturally nourishing. They were rich in ingredients now known for their anti-inflammatory and heart-supportive benefits. What felt like comfort food was also deeply healing.

That realization stayed with me. It inspired me to share these dishes with others and to show that flavorful, culturally rooted food can support health in simple, accessible ways.

Over time, I became increasingly fascinated by how food not only connects us culturally but also promotes health and healing. I wanted to understand the science behind the traditions I grew up with — the nutrient-dense ingredients, the balance of flavors, and the lifestyle patterns that support longevity and well-being.

This curiosity led me to pursue a Master of Science in Nutrition and become a Registered Dietitian Nutritionist.

Today, as a Registered Dietitian Nutritionist based in Chicago, Illinois, I blend evidence-based research with the richness of cultural food traditions. My recipes are rooted in flavor, abundant in whole, nutrient-dense ingredients, and thoughtfully crafted to support health — without sacrificing joy.

My goal is simple:
To show how accessible nourishing food can be.
To inspire families to reconnect with their kitchens.
To empower readers to take control of their health through food.

Through sharing stories from Egypt, from Alexandria’s Mediterranean coast, and from my own family table, I hope to demonstrate that food is not just fuel — it is culture, memory, and one of our most powerful tools for healing.

Welcome to my kitchen. Bil Hana wal Shifaa!

(Arabic phrase meaning: With happiness and healing!)
