Tasty Beef Tacos

I’m all about cooking easy meals, especially if they are kid friendly. My daughter LOVES cheese and she loves corn. So naturally, tacos came to mind! But they have to be full of flavor!

Its all about the meat with this recipe, and it is nothing short of flavor. As most of my recipes go, there are no canned foods involved here! You will be surprised how easy it is to make your foods with fresh non-processed whole food. 

I make this ground beef with a variety of spices, and there is no need to buy the overpriced “taco seasoning” mixes. I first layer on the flavors by sautéing onions and garlic with the meat. It drives me crazy whenever I see or taste meat that has not been well seasoned or marinated with much more than salt. We have spices and garlic for a reason! I then layer on the mexican flavors necessary to make it taco meat with all spice, cilantro, turmeric, smoked paprika, chili powder, cayenne pepper, and cumin. I also add red pepper flakes for heat- but be careful with this if feeding your kids because it will get spicy. I did not put so much  to dissuade my daughter but she is used to some spice anyway.

Using fresh corn is SO easy, I never buy canned of frozen anymore. I just peel the husk away, wash the corn on the cob, and wrap in  moist paper towel and microwave for about 2 minutes. Once it is cooled you just chop the corn right of the cob cutting downward. For extra special flavor, I love to just roast it on the grill or if you have a gas range set it right on top of the flame for some delicious char flavor!

I like to  make my own salsa or guacamole by tossing the fresh avocado, tomatoes, onion, jalapeño, cilantro, and lime juice into my blender. This time, I just served it alongside my guacamole salad so there was no need for salsa.

Building the tacos is the funnest part for the family. It is hands on for the kids and mom can usually just sit down and eat too! Just set the corn, shredded cheese, beef, salsa and any other desired toppings into small bowls with spoons and let them go to town! The kids will love helping themselves and are likely to eat more this way. Try it; you may have to clean a little more of a mess at the end but you won’t be wasting time trying to con your kids into eating their food! For me, that’s a huge stress relief!
